A dreamy texture that floats across the tongue. The flavor is rich and unique, due to the inclusion of malt. Ah, there's the rub. If you don't like malt, you probably won't like this. The malt flavor was a tiny bit heavy, and ultimately competed with, rather than complemented, the chocolate. But I'd be happy with a box of these any day! Our rating: 4 of 5 bon bons Le Noir (56%) 2.12.06There isn't much wrong with this bar. It boasts an impressively rich flavor with subtle notes of fruitiness, acidity, and sweetness. And nothing bitter whatsoever - just a full mouth sensation and a lovely lingering aftertaste. The texture was perfect as well. But, one reviewer found the flavor just a teensy bit too acidy-sweet, the other found the texture ever so slightly rubbery. And the reviewers didn't agree with each other on these points. :) Our rating: 4.75 of 5 bon bons Chocolate Caraibe Bittersweet (66%) 6.13.06This was sold in a large hunk with the baking chocolate. The label (not Valrhona's) didn't even mention sugar. Who knows what's really in it. It has a fairly fruity, verging on sour, taste, a nice texture, and a somewhat bitter aftertaste. It's meant to be, and tastes like, an ingredient rather than a finished chocolate. So our rating isn't really relevant. For baking, I'm sure it's perfect.
